Baking aubergine with honey and tamari gives it a delicious salty, sweet stickiness (top tip: if you can't find tamari, you can use soy sauce instead!) The freshness of the lemony saffron yoghurt adds to the fragrant complexity of this Middle Eastern-inspired dish.
